Recipe: Baklava

A delicious recipe from the Greek islands to celebrate our expanded cafe. Delicious with coffee - or anything else. Showy and impressive but surprisingly easy to make.
Makes 12 slices
500 g filo pastry
200 g melted butter
75 g chopped walnuts
75 g chopped almonds
1 tsp cinnamon
100 ml warmed honey
Cut 5 sheets filo pastry to fit your 9 x 12 inch baking dish. Lay them one by one in the dish, brushing each liberally with butter. Mix the nuts and cinamonn together and sprinkle 1/2 over the top layer. Repeat the process with another 5 sheets of filo pastry and once again, sprinkle the top layer with the nut mixture. Add a final 5 layers of filo and butter and bake at 180 degrees for 30 to 40 minutes until golden brown. Whilst still hot, brush on the warmed honey and then slice. Leave to cool (if you can) before serving.
